Garlicky Beer Bread

 
There might be nothing nicer than a cold beer after a long, hard day but beer has more uses than just being a thirst quencher. Beer makes a wonderful batter for frying fish and can even be used to make bread.

It can be mixed with flour, sugar and butter for a basic beer bread, which is ideal for dipping in chili con carne or a rich stew. Beer bread does not have the obvious beer taste, but it does have a yeasty, malty aroma and a unique flavor. The following recipe also includes garlic for added flavor.

Ingredients -
 
12 oz good quality beer
4 tablespoons butter
2 tablespoons dried yeast
2 teaspoons garlic powder
3 tablespoons sugar
6 cups flour
1 tablespoon salt
½ cup cooled, scalded milk
 
Preparation:
 

Warm the beer slightly and place it in a large mixing bowl with the yeast, sugar, garlic, salt, and milk. Stir the mixture together and let it rest until the yeast is dissolved. This will take about 10 minutes. Mix in 4 cups of the flour and knead. Add the rest of the flour gradually until the bread is the right consistency. Knead for 10 minutes until the dough is smooth. If it is sticky, add more flour and keep kneading it.

Preheat the oven to 350 degrees F. Put the dough in a large greased bowl and cover with a warm, wet cloth until the dough doubles in size. Punch it down and let it rise again. Punch it down again and knead it for a couple of minutes. Divide the mixture in two and roll into a ball slightly press down on the center, place on a flat stone-baking sheet lightly coated with olive oil. Let it rise on the baking stone until doubled again.

Bake the bread for about 50 minutes or until golden brown, and then turn out on wire racks to cool. If you like buttery bread, you can rub a stick of butter over the top of the bread when you take it out of the oven, for a buttery flavored crust.
